Red Wine Cake
“Red Wine cake ?” you ask
I made this recipe up in my head and once the thought came in I couldn't wait to try it out, there are a few wine based cakes out there but this one is one I devised myself.
I wondered if reduced red wine would be ok to flavour a cake, here is the attempt.
The cake was fantastic and the ganache was unbelievably good I will be doing this again soon.
So the recipe
Ingredients
200 gms butter
210 gms flour, I used gluten free bread flour
40 gms cocoa powder
1 tsp baking powder
25o gms caster sugar
4 eggs, weighed at 244 gms
1 bottle 750ml red wine reduced to 150 ml, 100ml for the cake 50 ml for the ganache
For the ganache
300 gms milk chocolate orange
300 ml double cream
50 ml red wine concentrate
Method
Turn the oven on to 160 to warm up.
Butter 2 7 inch cake tins.
Cream the sugar and butter until light fluffy and combined.
Add the eggs one at a time mixing well before adding the next egg once all the eggs are added sieve the flour, cocoa and baking powder into the wet mix and combine with a spatular then add 100 ml of the reduced wine and mix well.
Divide between the tins and bake for about 30 min until a skewer inserted in the middle comes out clean.
Leave to cool.
For the ganache.
Use a sauce pan to heat up the cream but do not boil, as long as its hot and starting to bubble around the edges its done.
Put 300 gms milk chocolate orange in a food mixer and with the blade attachment break up the pieces until very small and place in a mixing bowl.
Pour the cream over the chocolate pieces and leave for a few minutes then mix well, if the chocolate does not completly melt microwave a few seconds at a time until all is melted, add the 50ml wine and mix, place in the fridge to cool.
Once cooled
Once all is cooled the ganache can be added as a filling or topping or both as you wish
Tips
I whipped and piped the ganache, you could use it warm as a drip or choose cream cheese frosting instead.
Iwas a bit eagre to try it and the cakes was not 100% cooled and the ganache melted in the middle so make sure you leave it to cool brefore assembling.
I used milk chocolate oranges as I had them i was going to use dark chocolate so that would work as would using normal chocolate instead of orange.
